I think I have a new solution for breakfast, because I'm always short on time and the thought of actual food doesn’t generally appeal—chia fresca.
To make it, I mix pomegranate and black cherry juice with a squeeze of citrus (whatever I have on hand), then shake with a tablespoon or so of chia seeds. I put it in the fridge overnight and in the morning the seeds have absorbed the juice and plumped up. I sip on this after my coffee and the protein from the seeds carries me through to lunch. It’s super simple, very refreshing—and incredibly easy to put together on a rushed weeknight.
