I'm always trying to get more plant-based proteins into my diet, and my recent discovery of Zürsun Beans is helping a lot with this endeavor. The heirloom beans and lentils I've bought from them are so delicious—all they really need is to be rehydrated, cooked, then tossed with fresh herbs and a tiny amount of butter. I also have plans to make some dals for filling, inexpensive lunches (their recipe at the bottom of this page looks great). Aside from the many benefits of supporting heirloom varietals, rehydrating dry beans means you're not exposing yourself to BPA, which lines most cans of beans.
