Eat The Rainbow: Smoothie Edition

Part of healthy eating includes embracing the vibrant rainbow of colors available in fruits and vegetables. So I gave myself a challenge: five days, five breakfast smoothies, five different colors.

Red. 

Pomegranate, Strawberry, Raspberry, Pink Lady Apple, Red Beet, Red Cabbage, Lemon.

Orange. 

Carrots, Gold Beets, Orange, Ginger, Lemon.

Yellow.

Pineapple, Banana, Golden Delicious Apple, White Grape Juice, Ginger, Lemon.

Green.

Kale, Collard Greens, Broccoli, Green Grapes, Anjou Pear, Granny Smith Apple, Lemon.

Indigo-ish.

To make the smoothies, I dropped everything into my handy-dandy Vita-Mix and processed. I don't use dairy in my smoothies, but one could easily add a bit of yogurt to make them creamier.  I've found that the more I eat fruits and veggies in smoothies without any 'filler', the more I genuinely enjoy the taste of them just as they are.
