I got a few bunches of heirloom carrots from Satur Farms this weekend, and my goodness, they're just delicious. My favorite prep ever for carrots was the way I once had them at Blue Hill at Stone Barns, where they were served raw with just the tiniest bit of sea salt on them. Delicious.
My second favorite way to eat them is absolutely plain, and I just scrub them with a brush before eating—no peeling involved. I also like them with a bit of plain home-made hummus. No matter how I eat them, they're one of my favorite snacks and it's great to have something so tasty and healthy in the house.
