Andrew and I have been having kale-carrot-apple-ginger-lemon-berry smoothies almost every morning, so I thought it was time for a little treat. I spotted this recipe at Kitchn and pretty much lost my mind. I made a few adaptations---less bacon (and no bacon fat brushed over the top), whole wheat flour (and only whole wheat flour), less butter, low fat sharp cheddar, and a couple of minced shallots in addition to the chive. I also didn't turn it onto a floured board to cut out the biscuit shapes, instead I just shaped them into balls and set them in the cast iron pan.
They are delicious. Delicious. I made them small so that we could have one every morning this week with our coffee. (They look big in the picture but the cast-iron pan is less than 10" across.) All in all, it's a great way to slake a craving for bacon, as each biscuit only has about a third of a piece of bacon in it. By chopping it so finely it really fans out in the dough, making for some serious decadence.
