Yes, my friends, that is what could be called a statistically significant amount of blueberries. Fresh Direct had a sale on organic blueberries and it was the best price I've seen in ages on blueberries, organic or no. It was two pints for $10, and I got 8 pints. It's $40 worth of one of nature's best foods, chock full of antioxidants and great for lowering cholesterol. At this price, I can freeze these suckers and eat them all summer long. And I will.
To get things started, here's my recipe for super simple dairy-free blueberry ice cream.
- 1 cup frozen blueberries
- about 1/3 cup of almond milk (or rice milk, soy milk, etc.)
- a tiny bit of the sweetener substitute of your choice (agave, palm sugar, coconut sugar, stevia, honey, maple syrup, brown rice syrup, yakon syrup, etc.), to taste (I used vanilla-infused agave)
- a tiny pinch of sea salt
I put all this stuff into the Vita-Mix, almond milk first, and process for about two minutes, until it's all blended and creamy. The consistency is like soft serve ice cream. Delicious, healthy, and refreshing on a warm day.
