Another week, another granola experiment. This time I decided to dehydrate some blueberries and pair them with a simple granola base that's just rolled oats and a sprinkling of fennel seeds. To wet the oats, I used a homemade applesauce that I made myself by pureeing apples in my Vita-Mix. I added a little agave, maple syrup, vanilla and some sea salt. Then the oat/fennel mixture went into the oven at 300 degrees for about 50 minutes, and I stirred the mixture every ten mixtures to get an even toast. As in my previous experiments, I folded the dehydrated fruit in after the cooked oats had cooled.
The resulting granola is really good---less sweet than previous versions (which weren't overly sweet to begin with). The applesauce also made the oats clump up a bit more, making those cute little clusters that render granola all the more snackable somehow. And the slight licorice taste of the fennel seed works well with the blueberries. I might have to make this one again.
